"Hummus" as it is known in Middle Eastern countries, is a delicious dip made with garbanzo beans and sesame seed paste. Try it!

STEPS

INGREDIENTS

  1. Place all the ingredients in a blender jar. Blend on high, adding the bean juice as needed to make a very thick puree'. (You will not need all of the juice). (It should be the thickness of sour cream).

1 - 15 oz can garbanzo beans, drained, (save

the juice)

¼ cup Tahini, see notes

2 T. extra-virgin olive oil

3 T. fresh lemon juice (1 large lemon)

1 t. fresh garlic, chopped or my garlic puree'

  • Place into a serving bowl. Pout the oil over the top. It may be made a few days in advance. Chill. The oil "preserves" it and, tastes good.
  • 2 T. extra-virgin olive oil

  • Serve with pita crisps, below. Serve. Dip right through the oil layer.
  • 2 - 3 rounds, fresh pita bread

    Pita Crisps:

Preheat the oven to 350 degrees. Cut each pita with scissors into eighths and separate the wedges. Place on an ungreased baking sheet. Bake until lightly browned, for about 10 minutes. Cool and store in a tin or serve.
