Swiss Fondue

Fondue is guaranteed to get people talking to each other as everyone dips crusty bread into the same pot! Serve with one of the Green Salads and a simple fruit dessert such as Chocolate Dipped Fruit or Frozen Bananas. This is classically served in a chafing dish to keep the cheese hot. If you don’t have a chafing dish, serve in a heatproof casserole and reheat as necessary. Make ahead; Chill and reheat!

   

STEPS

INGREDIENTS

  1. Cut the bread into 1" cubes – each with a crust on one side. Set aside

2 loaves baguettes, unsliced

  • Rub the garlic on the inside of a 2 quart heatproof glass casserole (or chafer insert). Add the wine and microwave for 4 minutes on high (or until hot but not boiling). Add the juice. Stir.
  • 1-2 t. fresh garlic, chopped or may garlic puree

    3 cups dry white wine

    2 T. lemon juice

  • Toss the cheese with the flour. Whisk the cheese mixture gradually) into the hot wine. Microwave on high for 2 minutes. Stop and whisk once. Stir in the kirsch (or wine) and the seasonings. Cook another 2 minutes on high. Stir
  • 2 lb Emmenthaler Swiss cheese – see notes

    ¼ cup flour

    6 T. kirsch, dry sherry or white wine

    ½ t. each white pepper and nutmeg

  • Serve in a chafing dish over a sterno. Or, serve in a casserole dish, reheating in the microwave as necessary.
