Great Zucchini

This tastes best when you use a lot of garlic! Yes, 2 tablespoons of garlic. This is my favorite way to cook zucchini. Everybody loves it -- even the kids like it! See the variations.

   

STEPS

INGREDIENTS

  1. Slice the zucchini by hand or in a food processor into ¼" slices.

2 – 2 ½ lbs fresh zucchini

 

  • Place the oil in a large frying pan (or 2 pans, more oil) over a medium high heat.
  • 2 t. extra-virgin olive oil

     

  • When the oil is hot, add the zucchini, garlic, salt and pepper. Reduce the heat to medium low and cook, stirring occasionally, until the zucchini is lightly browned, 10-15 minutes. Serve!
  • 2 T fresh garlic, chopped or my garlic puree

    1 t. salt

    ½ t. white pepper

    Variations: Add any of these and cook with the zucchini:
