Quesadillas on the Grill

Try these on summer nights, or any other time…. Doing them on the BBQ creates wonderful flavor (or pan fry). I can make a meal of these. I have even used leftover frozen and thawed Crab Fondue. It was the greatest!

   

STEPS

INGREDIENTS

   
  1. Fire up the grill when you're ready to cook.
 
  • Place the tortillas in a (tortilla) warmer or wrap in a damp towel. Microwave for 1-2 minutes. Or, warm in a 300 degree oven.
  • 24 corn or flour tortillas - see note

    2 cups grated cheddar (or other cheese)

  • Place 2 T. of grated cheese, and 1 t. of salsa on each tortilla. Fold over. Grill for about 1 minute per side.
  • Or,

    In a frying pan over a medium high heat, cook for 1 minute.

    Turn them over. Cover, and cook for another minute until the cheese is melted.

    about 1 cup (any) "hot" green or red salsa

  • Serve immediately. Enjoy!
